Dopo averne tanto parlato vi scrivo la ricetta dei veri macarons, inventati da Ladurée intorno agli anni '30.
In pratica sono due meringhe alle mandorle accoppiate con crema ganache aromatizzata: semplice direte. In realtà non proprio così semplici da fare. Il loro vero fascino, oltre all'innegabile bontà, sono i colori che assumono e che solleticano la vena ludica di ognuno di noi.
Se volete farne un'orgia visiva andate a vedere "Marie Antoniette" di Sophia Coppola., non potrete resistergli.

150 gr di farina
150 gr di farina di mandorle
150 gr di zucchero a velo
150 gr di burro
6 albumi
gocce di colorante a scelta
crema al burro
1/4 lt di latte
2 tuorli
20 gr di farina
100 gr di burro morbido
100 gr di zucchero a velo
1 sacchetto di zucchero vanigliato
Aromi: estratto di caffè, estratto di vaniglia, polvere di cacao, purea di lamponi...
1 mescolate la farina, lo zucchero e la farina di mandorle. Unite il burro morbido e il colorante alimentare. Montate a neve gli albumi e incorporateli.
2 scaldate il forno a 180°. Con la siringa fate dei mucchietti di pasta su una placca coperta di carta da forno. Lisciate la superficie con un cucchiaio bagnato. Fate cuocere per 12'. Versate mezzo bicchiere d'acqua fredda tra la carta e la teglia. Dopo 3', staccate i biscotti. Continuare fino a finire la pasta.
3 la crema: portare il latte ad ebollizione. Montare i tuorli con metà zucchero. Aggiungete la farina, poi versate i latte caldo e mescolate senza interruzione. Travasate l'impasto in una casseruola e fate cuocere finchè non s'imspessisce. Lasciate raffreddare mescolando ogni tanto.
4 dividete la crema in quattro parti e unite gli aromi. Montate il burro morbido con il resto dello zucchero e incorporatelo alle creme profumate.
5 con la siringa farcite metà dei biscotti e copriteli con gli altri. Tenete al fresco fino al momento di servirli.

After so much talking I'll write you the recipe for real macarons, invented by Ladurée around 1930.
Basically they are two almonds meringues doubled with aromatic ganache cream: simple you'll say. In reality they are not so easy to do. Their great charm, a part from their undeniable goodness, are the colours they are made of and they tickle at the childish vein which is in all of us.
If you want to make an eye orgy go and see "Marie Antoniette" by Sophia Coppola, you will not resist to them.

150 gr flour
150 gr almond powder
150 gr powdered sugar
150 gr butter
6 egg whites
food colourings
butter cream
250 ml milk
2 yolks
20 gr flour
100 gr soft butter
100 gr powder sugar
1 bag vanille sugar
Flavourings: coffee extract, vanille extract, cocoa powder, raspberry purée...
1 mix flour, almond flour and sugar. Mix soft butter and a few drops of colourings. Whip the eggs whites and mix all together.
2 pre heat oven at 180°. By means of a siringe make little dots of batter on a oven shield covered with oven paper. Smooth with a wet spoon. Let them cook 12'. Pour half a glass of cold water beneath the paper and the tray. After 3' take off the biscuits. Repeat until you finish the batter.
3 prepare the cream: boil the milk. Whip well the yolks with half sugar. Add the flour, then add the hot milk and mix them well. Pour in the pan and let it cook until thick.
Let the cream get cold mixing it regularly.
4 divide the cream in 4 parts and put in the flavourings. Whip the soft butter with the remaining sugar and mix to the cream.
5 with a sac a poche put the cream on half biscuits and cover them with a second one. Keep in a cool place until eating.
